Roasted Garlic Butter Chicken

Ingredients

  • ½ cup butter, softened
  • 4 cloves garlic, minced
  • 2 Tbsp chopped fresh parsley
  • 2 tsp lemon zest
  • 3 lb bone-in, skin-on chicken breasts
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 425°F. Stir together butter, garlic, parsley, and lemon zest in a small bowl; rub mixture under and over skin on chicken. Sprinkle with salt and pepper.
  2. Place chicken, skin side up, on a large rimmed baking sheet lined with parchment paper or foil. Bake 35 to 45 minutes or until chicken is browned and done.

  • 1 (2-oz) pkg chopped pecans
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Cook green beans according to package directions.
  2. Melt butter in a skillet over medium heat, and add nuts; cook 5 minutes or until toasted and fragrant. Stir in beans, salt, and pepper; toss.
  3. Cook potatoes according to package directions.
