Ground Pork Lettuce Wraps
Orange Stir-Fry Vegetables and Brown RiceIngredients
- ¾ lb ground pork (or use ground turkey)
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp olive oil
- 3 Tbsp natural creamy peanut butter
- 2 tsp low-sodium soy sauce
- 1 clove garlic, minced
- 1 tsp grated ginger
- ½ tsp Asian chili garlic sauce
- 1 small head green leaf lettuce, leaves separated
- 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
- ½ lime, cut into wedges
Instructions
- Cook pork seasoned with salt and pepper in hot oil in a large skillet over medium-high heat 8 minutes or until pork is browned and crumbly; keep warm.
- Whisk together peanut butter, soy sauce, garlic, ginger, and chili garlic sauce.
- Divide pork among lettuce leaves; drizzle with peanut sauce. Sprinkle with cilantro, and serve with lime wedges.

- 1 (10-oz) pkg frozen brown rice
- 1 (12-oz) pkg vegetable stir-fry
- 1 Tbsp olive oil
- 1 Tbsp low-sodium soy sauce
- 1 Tbsp fresh orange juice
Side Dish Instructions
- Cook rice according to package directions.
- Sauté vegetables in hot oil in a large skillet over medium-high heat 5 minutes or until crisp-tender. Stir in soy sauce and orange juice.
