Ground Pork Lettuce Wraps

Ingredients

  • ¾ lb ground pork (or use ground turkey)
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp olive oil
  • 3 Tbsp natural creamy peanut butter
  • 2 tsp low-sodium soy sauce
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • ½ tsp Asian chili garlic sauce
  • 1 small head green leaf lettuce, leaves separated
  • 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
  • ½ lime, cut into wedges

Instructions

  1. Cook pork seasoned with salt and pepper in hot oil in a large skillet over medium-high heat 8 minutes or until pork is browned and crumbly; keep warm.
  2. Whisk together peanut butter, soy sauce, garlic, ginger, and chili garlic sauce.
  3. Divide pork among lettuce leaves; drizzle with peanut sauce. Sprinkle with cilantro, and serve with lime wedges.

  • 1 (12-oz) pkg vegetable stir-fry
  • 1 Tbsp olive oil
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp fresh orange juice

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Sauté vegetables in hot oil in a large skillet over medium-high heat 5 minutes or until crisp-tender. Stir in soy sauce and orange juice.
