Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 1 (8-oz) block cream cheese, cut up and softened
  • ¾ cup low-sodium chicken broth
  • 1 Tbsp everything bagel seasoning

Instructions

  1. Sprinkle chicken lightly with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 minutes. Turn chicken, and add onion to skillet; cook 5 minutes or until onion is browned and chicken is done. Remove chicken to a plate; keep warm.
  2. Add cream cheese and broth to skillet; cook 3 minutes or until thoroughly heated. Spoon sauce over chicken. Sprinkle with bagel seasoning. Serve over cauliflower rice.

  • 1 (20-oz) pkg frozen riced cauliflower
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 1½ tsp Dijon mustard
  • ¼ tsp salt
  • 1 tsp pepper
  • 1 clove garlic, minced
  • 2 (10-oz) pkg chopped romaine lettuce
  • ⅓ cup freshly shredded Parmesan cheese

Side Dish Instructions

  1. Cook cauliflower according to package directions. Season with salt and pepper.
  2. Whisk together oil, lemon juice, mustard, salt, pepper, and garlic in a large bowl until blended. Add lettuce; toss. Sprinkle with cheese before serving.
