Pepper-Jack Burgers with Caramelized Red Onions
Zucchini Chips
Ingredients
- 3 Tbsp butter
- 2 red onions, thinly sliced
- 2 lb ground beef
- 2 Tbsp Worcestershire sauce
- 2 tsp chili powder
- 1 tsp ground cumin
- ½ tsp salt
- 6 slices pepper-Jack cheese
- 6 romaine lettuce leaves (or use green leaf lettuce)
Instructions
- Melt butter in a large skillet over medium heat. Add onions; cover and cook 15 minutes or until tender. Uncover and increase heat to medium-high. Cook, stirring constantly, until onions are golden brown.
- Meanwhile, combine beef, Worcestershire, chili powder, cumin, and salt. Shape mixture into 6 patties.
- Cook patties in same skillet over medium heat 6 to 8 minutes per side or until no longer pink. Top each patty with cheese; cook 1 minute or until cheese is melted.
- Serve burgers on lettuce leaves; top with caramelized onions.
Side Dish Ingredients
- ¼ cup freshly grated Parmesan cheese
- ¼ cup almond flour
- ½ tsp garlic salt
- 2 cups sliced zucchini (about 2 medium)
- 2 Tbsp olive oil
Side Dish Instructions
- Preheat oven to 425°F. Combine cheese, almond flour, and garlic salt in a small bowl.
- Toss zucchini in oil. Dip zucchini slices in cheese mixture, coating both sides. Place in a single layer on a lightly greased rimmed baking sheet.
- Bake 20 to 25 minutes or until browned and crisp.
