Pepper-Jack Burgers with Caramelized Red Onions

Ingredients

  • 3 Tbsp butter
  • 2 red onions, thinly sliced
  • 2 lb ground beef
  • 2 Tbsp Worcestershire sauce
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp salt
  • 6 slices pepper-Jack cheese
  • 6 romaine lettuce leaves (or use green leaf lettuce)

Instructions

  1. Melt butter in a large skillet over medium heat. Add onions; cover and cook 15 minutes or until tender. Uncover and increase heat to medium-high. Cook, stirring constantly, until onions are golden brown.
  2. Meanwhile, combine beef, Worcestershire, chili powder, cumin, and salt. Shape mixture into 6 patties.
  3. Cook patties in same skillet over medium heat 6 to 8 minutes per side or until no longer pink. Top each patty with cheese; cook 1 minute or until cheese is melted.
  4. Serve burgers on lettuce leaves; top with caramelized onions.

Side Dish Ingredients

  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup almond flour
  • ½ tsp garlic salt
  • 2 cups sliced zucchini (about 2 medium)
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 425°F. Combine cheese, almond flour, and garlic salt in a small bowl.
  2. Toss zucchini in oil. Dip zucchini slices in cheese mixture, coating both sides. Place in a single layer on a lightly greased rimmed baking sheet.
  3. Bake 20 to 25 minutes or until browned and crisp.
