Grilled Chicken-Avocado-Strawberry Salad

Ingredients

  • ¾ lb boneless, skinless chicken breasts, halved crosswise
  • 1 Tbsp olive oil
  • 3 Tbsp sliced almonds
  • 2½ cups chopped romaine lettuce
  • ½ cup sliced strawberries
  • ¼ cup diced avocado
  • ¼ cup thinly sliced red onion
  • ¼ cup balsamic vinaigrette

Instructions

  1. Preheat grill or grill pan to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Brush chicken with oil; season lightly with salt and pepper. Grill chicken, covered, 5 to 6 minutes per side or until done. Let stand 5 minutes; chop.
  3. Toast nuts in a small dry skillet over medium heat 3 minutes, stirring often, or until golden.
  4. Divide lettuce, strawberries, avocado, onion, and nuts between 2 plates. Top with chicken; drizzle with vinaigrette.
