Grilled Chicken-Avocado-Strawberry Salad
Ingredients
- ¾ lb boneless, skinless chicken breasts, halved crosswise
- 1 Tbsp olive oil
- 3 Tbsp sliced almonds
- 2½ cups chopped romaine lettuce
- ½ cup sliced strawberries
- ¼ cup diced avocado
- ¼ cup thinly sliced red onion
- ¼ cup balsamic vinaigrette
Instructions
- Preheat grill or grill pan to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Brush chicken with oil; season lightly with salt and pepper. Grill chicken, covered, 5 to 6 minutes per side or until done. Let stand 5 minutes; chop.
- Toast nuts in a small dry skillet over medium heat 3 minutes, stirring often, or until golden.
- Divide lettuce, strawberries, avocado, onion, and nuts between 2 plates. Top with chicken; drizzle with vinaigrette.
