Chicken Fajita Bowls

Ingredients

  • 1½ lb chicken cutlets, thinly sliced
  • 2 Tbsp olive oil, divided
  • 1 large green bell pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (10-oz) pkg chopped romaine lettuce
  • ½ cup fresh salsa
  • ½ cup crumbled queso fresco

Instructions

  1. Cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until done. Remove chicken from pan, and set aside.
  2. Cook bell pepper, onion, and garlic in 1 Tbsp hot oil in same skillet 5 minutes or until tender.
  3. Return chicken to pan, and sprinkle with cumin, salt, and pepper; cook until thoroughly heated.
  4. Divide lettuce among 4 bowls; top with chicken mixture, salsa, and cheese.
