Lemon-Dill Grouper Piccata

Ingredients

  • 6 (6-oz) grouper fillets (or use tilapia or cod)
  • ½ tsp salt
  • ¼ tsp pepper 
  • 1½ Tbsp chopped fresh dill (or use 2 tsp dried)
  • 1 (8-oz) carton sour cream
  • ¼ cup capers
  • 1 lemon, cut into wedges

Instructions

  1. Preheat oven to 425°F. Sprinkle fish with salt and pepper. Place fish on a foil-lined baking sheet coated with cooking spray.
  2. Bake 10 minutes; sprinkle with dill. Bake 2 minutes longer or until fish flakes with fork.
  3. Meanwhile, combine sour cream and capers; serve sauce with fish. Squeeze lemon juice over fish.

  • 2 Tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat 3 to 4 minutes or until golden and fragrant.
  2. Steam green beans according to package directions until crisp-tender. Toss with oil, salt, and pepper. Sprinkle with nuts.
