Pesto Butter Chicken Thighs
Broccoli Rabe ItalianoIngredients
- 2 lb boneless, skinless chicken thighs
- 3 Tbsp olive oil
- ½ tsp salt
- ½ cup butter, softened
- 2 Tbsp pesto
- 1 tsp lemon zest
Instructions
- Preheat grill to medium-high heat. Rub chicken with oil; sprinkle with salt.
- Grill, covered, 5 minutes per side or until done.
- Meanwhile, stir together butter, pesto, and lemon zest. Spread pesto butter all over chicken.

- 1 lb broccoli rabe, trimmed
- 2 slices bacon, chopped
- 2 cloves garlic, thinly sliced
- 2 tsp chopped fresh oregano (or use ½ tsp dried)
- ½ tsp salt
Side Dish Instructions
- Cook broccoli rabe in boiling water to cover in a saucepan 2 minutes; drain. Plunge broccoli rabe into an ice water-filled bowl of water. Drain; pat dry with paper towels.
- Cook bacon in a large skillet over medium-high heat until crisp; remove bacon from skillet, reserving drippings.
- Add garlic to drippings in skillet; sauté 1 minute. Add broccoli rabe, oregano, and salt; cook 3 to 4 minutes or until broccoli rabe is tender. Sprinkle with bacon.
