Chicken-Potato Tot Kabobs

Ingredients
- 2 lb boneless, skinless chicken breasts
- 1 cup mayonnaise
- 1 large egg
- 2 cups panko
- 1 (1-oz) envelope ranch dressing mix
- 1 (32-oz) pkg extra-crispy potato tots, partially thawed
- 1 cup Ranch dressing
Instructions
- Preheat oven to 425°F. Cut chicken into 1½-inch pieces. Whisk together mayonnaise and egg in a bowl. Stir together panko and dressing mix in a separate bowl. Dip chicken in mayonnaise mixture; dredge in panko mixture to coat.
- Gently thread coated chicken and potato tots on wooden skewers; place on a lightly greased rack over a rimmed baking sheet.
- Bake 20 minutes or until chicken is done and tots are browned and crisp.
- Serve with Ranch dressing for dipping.

- 1 pint blueberries
- 1 (16-oz) container strawberries, sliced
- 1 (15-oz) can mandarin oranges, drained
- ½ cup balsamic vinaigrette

- Toss together all ingredients in a bowl just before serving.
