Chicken-Potato Tot Kabobs

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 cup mayonnaise
  • 1 large egg
  • 2 cups panko
  • 1 (1-oz) envelope ranch dressing mix
  • 1 (32-oz) pkg extra-crispy potato tots, partially thawed
  • 1 cup Ranch dressing

Instructions

  1. Preheat oven to 425°F. Cut chicken into 1½-inch pieces. Whisk together mayonnaise and egg in a bowl. Stir together panko and dressing mix in a separate bowl. Dip chicken in mayonnaise mixture; dredge in panko mixture to coat.
  2. Gently thread coated chicken and potato tots on wooden skewers; place on a lightly greased rack over a rimmed baking sheet.
  3. Bake 20 minutes or until chicken is done and tots are browned and crisp.
  4. Serve with Ranch dressing for dipping.

  • 1 (10-oz) pkg spinach
  • 1 pint blueberries
  • 1 (16-oz) container strawberries, sliced
  • 1 (15-oz) can mandarin oranges, drained
  • ½ cup balsamic vinaigrette

  1. Toss together all ingredients in a bowl just before serving.
