Roasted Broccoli

Ingredients

  • 2 (9-oz) pkg refrigerated fettuccine
  • ¼ cup butter
  • 3 Tbsp all-purpose flour
  • 2½ cups milk
  • 2 Tbsp minced garlic (or use 1 tsp garlic powder)
  • 3 cups freshly shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; keep warm.
  2. Meanwhile, melt butter in a large Dutch oven over medium heat; whisk in flour, and cook, whisking constantly, 2 minutes.
  3. Stir in milk and garlic; cook, whisking constantly, until mixture is thickened and bubbly.
  4. Remove from heat; whisk in cheese until melted. Add pasta to cream mixture, toss.

Side Dish Ingredients

  • 1 head broccoli, cut into florets
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together broccoli and oil on a lightly greased rimmed baking sheet.
  2. Bake 15 minutes or until crisp-tender. Season with salt and pepper to taste.
