Falafel Pitas with Tahini Sauce
Carrot, Radish, and Beet SlawIngredients
- 1 (6.25-oz) pkg falafel mix
- 2 Tbsp olive oil
- ¼ cup tahini (sesame seed paste)
- 1 Tbsp chopped fresh parsley
- 1 tsp lemon juice
- 1 tsp honey
- ½ tsp ground cumin
- ½ to 1 Tbsp water
- 3 whole wheat pita bread rounds
- 1 cup spring mix
- 1 small tomato, seeded and chopped
- ¼ cup sliced red onion
Instructions
- Prepare falafel mix according to package directions. Cook falafels in hot oil in a large skillet according to package directions.
- Meanwhile, combine tahini, cilantro, lemon juice, honey, cumin, and salt in a medium bowl; gradually whisk in water until smooth.
- Spread tahini mixture on one side of pitas. Divide falafels, greens, tomato, and onion among pitas. Roll up to serve.
Side Dish Ingredients
- 2 carrots, cut into matchstick pieces
- 3 radishes, sliced
- 1 small golden beet, peeled and cut into matchstick pieces (about 2 cups)
- 1½ Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together ingredients in a large bowl.
