Falafel Pitas with Tahini Sauce

Ingredients

  • 1 (6.25-oz) pkg falafel mix
  • 2 Tbsp olive oil
  • ¼ cup tahini (sesame seed paste)
  • 1 Tbsp chopped fresh parsley
  • 1 tsp lemon juice
  • 1 tsp honey
  • ½ tsp ground cumin
  • ½ to 1 Tbsp water
  • 3 whole wheat pita bread rounds
  • 1 cup spring mix
  • 1 small tomato, seeded and chopped
  • ¼ cup sliced red onion

Instructions

  1. Prepare falafel mix according to package directions. Cook falafels in hot oil in a large skillet according to package directions.
  2. Meanwhile, combine tahini, cilantro, lemon juice, honey, cumin, and salt in a medium bowl; gradually whisk in water until smooth.
  3. Spread tahini mixture on one side of pitas. Divide falafels, greens, tomato, and onion among pitas. Roll up to serve.

Side Dish Ingredients

  • 2 carrots, cut into matchstick pieces
  • 3 radishes, sliced
  • 1 small golden beet, peeled and cut into matchstick pieces (about 2 cups)
  • 1½ Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Toss together ingredients in a large bowl.
