Southwest Turkey Burgers

Cumin Zucchini Crisps and Refried Black Beans

Ingredients

  • 1 lb ground turkey
  • ¼ cup chopped red onion
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 hamburger buns, toasted
  • 3 slices Monterey Jack cheese
  • 3 slices tomato
  • ½ (8-oz) container refrigerated guacamole

Instructions

  1. Combine turkey, onion, garlic, salt, and pepper in a bowl; shape into 3 patties.
  2. Pour ¼ cup water into a 5- to 6-quart slow cooker. Crumple a large piece of aluminum foil, and place in cooker over water. Place 3 patties on foil without touching (see Note).
  3. Cover and cook on LOW 6 to 7 hours or until turkey is fully cooked and no longer pink in centers.
  4. Serve patties on buns with cheese, tomato, and guacamole.

Side Dish Ingredients

  • 3 Tbsp mayonnaise
  • ½ lb zucchini, thinly sliced
  • ½ cup panko breadcrumbs
  • 1 tsp ground cumin
  • 1 (16-oz) can refried black beans

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Toss together zucchini and mayonnaise in a bowl until completely coated.
  3. Combine breadcrumbs and cumin in a shallow dish; add zucchini to breadcrumb mixture, and gently press to coat completely.
  4. Arrange zucchini in a single layer on a greased baking sheet; spray tops with cooking spray. Bake 15 to 20 minutes or until lightly golden, turning after 10 minutes.
  5. Meanwhile, heat refried beans according to package directions.
