Ingredients

  • 1 (12.5-oz) can chunk chicken breast
  • ½ (24-oz) pkg refrigerated sour cream and chive mashed potatoes
  • 1 cup panko breadcrumbs, divided
  • ½ cup shredded Parmesan cheese
  • 1½ Tbsp chopped fresh basil
  • 3 Tbsp olive oil

Instructions

  1. Combine chicken, potatoes, ½ cup breadcrumbs, cheese, and basil in a large bowl; season lightly with salt and pepper. Shape mixture into 9 patties. Dredge patties in ½ cup breadcrumbs to coat.
  2. Cook patties in hot oil in a large nonstick skillet over medium-high heat until browned and crisp on both sides.

Side Dish Ingredients

  • ½ cup chopped onion
  • 1 Tbsp olive oil
  • 1 cup frozen baby lima beans
  • 1 cup frozen whole kernel corn
  • ¼ cup chicken broth
  • 1 cup grape tomatoes, halved

Side Dish Instructions

  1. Sauté onion in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes or until tender.
  2. Stir in lima beans, corn, broth, and salt and pepper to taste; reduce heat to medium. Cook, covered, 15 minutes or until limas are tender. Stir in tomatoes.
