One-Pot Cheeseburger Gnocchi

Ingredients

  • 1 Tbsp butter
  • ½ (16-oz) pkg gnocchi
  • ½ lb ground beef
  • ¼ cup chopped onion
  • ½ (14.5-oz) can diced tomatoes, drained
  • ½ (10.5-oz) can cream of celery soup
  • ⅓ cup low-sodium chicken broth
  • 1½ tsp Worcestershire sauce
  • 1 cup shredded Cheddar cheese

Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Add gnocchi, and cook 3 to 4 minutes or until toasted. Remove from skillet.
  2. Cook beef and onion in same skillet over medium heat 8 minutes or until beef is browned and crumbly; drain and return to skillet.
  3. Stir in tomatoes, soup, broth, Worcestershire, and gnocchi. Bring to a boil; reduce heat, cover and simmer 10 minutes or until gnocchi is tender. Stir in cheese.

Side Dish Ingredients

  • ½ head iceberg lettuce
  • ¼ cup Ranch dressing
  • 1 Roma tomato, chopped
  • ¼ cup chopped red onion
  • ¼ tsp pepper

Side Dish Instructions

  1. Cut lettuce into 2 wedges, and divide between 2 plates. Drizzle with dressing; sprinkle with tomato, onion, and pepper.
