Ingredients

  • ½ lb ground chicken
  • ¼ cup Italian panko breadcrumbs
  • 3 Tbsp freshly grated Parmesan cheese
  • 1 clove garlic, minced
  • 2 (1-oz) slices mozzarella cheese
  • 2 hamburger buns
  • 1 (0.5-oz) pkg fresh basil
  • ½ cup marinara sauce, heated

Instructions

  1. Combine chicken, panko, Parmesan, and garlic in a bowl; shape mixture into 2 patties.
  2. Cook patties in a cast-iron or nonstick skillet over medium heat 5 to 6 minutes per side or until done. Top with mozzarella; cover and cook 1 minute or until cheese melts.
  3. Serve burgers on buns with basil and marinara sauce.

  • 2 tsp olive oil
  • 1 tsp lemon juice
  • ½ tsp Dijon mustard
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper
  • 3 cups baby spinach
