Chicken Parmesan Burgers

Ingredients
- ½ lb ground chicken
- ¼ cup Italian panko breadcrumbs
- 3 Tbsp freshly grated Parmesan cheese
- 1 clove garlic, minced
- 2 (1-oz) slices mozzarella cheese
- 2 hamburger buns
- 1 (0.5-oz) pkg fresh basil
- ½ cup marinara sauce, heated
Instructions
- Combine chicken, panko, Parmesan, and garlic in a bowl; shape mixture into 2 patties.
- Cook patties in a cast-iron or nonstick skillet over medium heat 5 to 6 minutes per side or until done. Top with mozzarella; cover and cook 1 minute or until cheese melts.
- Serve burgers on buns with basil and marinara sauce.

- 2 tsp olive oil
- 1 tsp lemon juice
- ½ tsp Dijon mustard
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- 3 cups baby spinach
Side Dish Instructions
- Whisk together oil, lemon juice, mustard, salt, and pepper in a bowl. Add spinach; toss.
