Ingredients

  • 1 (14.7-oz) can vegetarian chili
  • 1 cup yellow corn kernels (4 ears corn; or use frozen corn, thawed)
  • 1 (5-oz) pkg whole-grain tortilla chips
  • ½ (8-oz) pkg shredded sharp Cheddar cheese
  • 1 avocado, sliced

Instructions

  1. Preheat oven to 350°F. Heat chili and corn in a saucepan 3 to 5 minutes, stirring often.
  2. Spread chips on a rimmed baking sheet. Top with chili mixture and cheese. Bake 7 to 9 minutes or until cheese is melted. Top with avocado.

  • ⅛ tsp chili powder
  • ⅛ tsp salt
  • 1 large mango, sliced
