Garlic-Rosemary Salmon
Tomato-Goat Cheese CouscousIngredients
- 3 (6-oz) salmon fillets
- 1½ Tbsp butter, melted
- ¼ tsp pepper
- ⅛ tsp garlic salt
- 1 Tbsp chopped fresh rosemary (or use 1 tsp dried crushed rosemary)
Instructions
- Preheat broiler with oven rack 6 inches from heat. Arrange fish on a foil-lined baking sheet; brush with butter, and sprinkle with pepper and garlic salt.
- Broil 5 to 7 minutes or until fish flakes with a fork. Sprinkle with rosemary.

- ¾ cup low-sodium chicken broth
- ¾ cup whole wheat couscous
- ¼ cup crumbled goat cheese (or use feta)
- 2 small tomatoes, diced
- 3 green onions, chopped
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Bring broth to a boil in a medium saucepan. Stir in couscous; remove from heat, and let stand, covered, 5 to 6 minutes or until broth is absorbed.
- Stir in cheese, tomatoes, green onions, salt, and pepper.
