Healthy Fudge Pops

Ingredients
- 2 cups milk
- 1 tsp instant espresso powder
- ⅓ cup unsweetened baking cocoa
- ½ cup dark chocolate chips, divided
- 1 tsp vanilla extract
- ¼ cup maple syrup
- ⅛ tsp salt
- ½ cup chopped peanuts
Instructions
- Heat milk, espresso powder, cocoa, ¼ cup chocolate chips, vanilla, maple syrup, and salt in a saucepan over medium heat 5 to 10 minutes or until chocolate melts, whisking occasionally; cool 15 minutes.
- Pour mixture into pop molds, and freeze 4 hours or overnight.
- Melt ¼ cup chocolate chips in microwave in 30-second intervals until smooth.
- Remove fudge pops from molds. Drizzle with melted chocolate; sprinkle with nuts.
