Healthy Fudge Pops

Ingredients

  • 2 cups milk
  • 1 tsp instant espresso powder
  • ⅓ cup unsweetened baking cocoa
  • ½ cup dark chocolate chips, divided
  • 1 tsp vanilla extract
  • ¼ cup maple syrup
  • ⅛ tsp salt
  • ½ cup chopped peanuts

Instructions

  1. Heat milk, espresso powder, cocoa, ¼ cup chocolate chips, vanilla, maple syrup, and salt in a saucepan over medium heat 5 to 10 minutes or until chocolate melts, whisking occasionally; cool 15 minutes.
  2. Pour mixture into pop molds, and freeze 4 hours or overnight.
  3. Melt ¼ cup chocolate chips in microwave in 30-second intervals until smooth.
  4. Remove fudge pops from molds. Drizzle with melted chocolate; sprinkle with nuts.
