Roasted Potatoes and Asparagus

Ingredients

  • 3 (6-oz) grouper fillets (or use mahi mahi)
  • 1 Tbsp smoked paprika (or use harissa seasoning blend, if available)
  • ¼ tsp salt
  • 1 Tbsp olive oil, divided
  • 1 Tbsp butter, divided
  • ½ lemon, cut into wedges

Instructions

  1. Pat fish dry with paper towels; sprinkle with seasoning.
  2. Cook fish in ½ Tbsp hot oil and ½ Tbsp butter in a large nonstick skillet over medium-high heat 3 minutes per side or until fish flakes with a fork. Serve with lemon wedges.

  • 1 lb small red potatoes, quartered
  • ¼ cup olive oil vinaigrette, divided
  • ¼ tsp salt, divided
  • 1 lb asparagus, trimmed
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together potatoes, 2 Tbsp vinaigrette and ⅛ tsp salt on a large rimmed baking sheet; spread in a single layer.
  2. Toss together asparagus, 2 Tbsp vinaigrette, and ⅛ tsp salt on another baking sheet; spread in a single layer.
  3. Roast potatoes 20 minutes or until browned and tender. Roast asparagus 15 minutes or until lightly browned and tender. Sprinkle with pepper.
