Pine Nut and Argula Pasta Agilo e Olio

Ingredients

  • ½ (16-oz) pkg spaghetti (preferably whole-grain)
  • 3 Tbsp olive oil
  • 3 cloves garlic, thinly sliced
  • ¼ cup pine nuts
  • ½ tsp kosher salt
  • ¼ tsp crushed red pepper
  • ½ (5-oz) pkg baby arugula
  • 1 Tbsp lemon juice
  • ⅓ cup freshly shaved Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain and return to pot, reserving ¼ cup pasta water.
  2. Meanwhile, bring oil, nuts, and garlic to a simmer in a small saucepan over medium-low heat; cook, stirring constantly, 5 to 7 minutes or until garlic and nuts are golden and fragrant.
  3. Remove from heat; stir in salt and red pepper. Add nut mixture, arugula, lemon juice, and reserved pasta water to pasta; toss. Serve sprinkled with cheese.
