Skillet Turkey Pastitsio
Easy Steamed Green Beans
Ingredients
- ¼ cup plus 1 Tbsp butter, divided
- ¼ cup all-purpose flour
- 2 cups 2% reduced-fat milk
- 2 large egg yolks
- ¾ cup freshly grated Parmesan cheese, divided
- ½ tsp kosher salt, divided
- ½ tsp pepper, divided
- 1 lb lean ground turkey
- 1 Tbsp minced garlic
- 1 (8-oz) can tomato sauce
- 2 Tbsp tomato paste
- 1 tsp ground cinnamon
- ½ tsp granulated sugar
- 3 (8.5-oz) pouches microwaveable penne pasta (see Note)
Instructions
- Preheat oven to 400°F. Melt ¼ cup butter in a large ovenproof skillet over medium heat. Whisk in flour; cook, stirring, 1 minute.
- Gradually whisk in milk; cook, stirring, 3 to 5 minutes or until thickened. Transfer to a medium bowl. Whisk in egg yolks, ¼ cup cheese, and ¼ tsp each salt, and pepper.
- Wipe skillet clean. Melt 1 Tbsp butter in skillet over medium heat; add turkey and garlic, and cook 5 to 7 minutes or until browned and crumbly.
- Stir in tomato sauce, tomato paste, cinnamon, sugar, and ¼ tsp each salt and pepper; simmer 5 minutes. Meanwhile, microwave pasta according to package directions.
- Remove skillet from heat. Fold in pasta and ½ of béchamel sauce into to turkey mixture. Top skillet with remaining béchamel and ½ cup cheese. Transfer skillet to oven; bake 10 to 15 minutes or until browned and bubbly.

Side Dish Instructions
- Microwave green beans according to package directions; toss with pepper and salt.
