Braised Pork in Rustic Tomato Sauce

Ingredients

  • ¾ lb pork tenderloin, cut into ¼-inch-thick slices
  • ¼ tsp salt, divided
  • ¼ tsp pepper
  • 1½ Tbsp olive oil, divided
  • ½ (8-oz) pkg sliced mushrooms
  • 1 clove garlic, minced
  • 1 (14.5-oz) can whole tomatoes, undrained and chopped
  • ¼ cup pitted kalamata olives, halved
  • ½ tsp dried oregano
  • Chopped fresh basil (optional)

Instructions

  1. Sprinkle pork with ⅛ tsp each salt and pepper. Cook in ½ Tbsp hot oil in a large, deep skillet over medium-high heat 1 to 2 minutes per side or until browned; remove from skillet, and keep warm.
  2. Cook mushrooms in 1 Tbsp hot oil in skillet 8 minutes or until browned and tender. Return pork to skillet; add garlic, tomatoes, olives, oregano, and ⅛ tsp salt. Cook 15 minutes or until sauce is thickened. Serve sprinkled with basil, if desired.

Side Dish Ingredients

  • 3 oz yolk-free egg noodles
  • ¾ lb green beans, trimmed
  • 1½ Tbsp extra virgin olive oil
  • 1 Tbsp chopped fresh basil
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook noodles according to package directions.
  2. Steam green beans in a steamer basket over boiling water 6 minutes or until crisp-tender.
  3. Toss beans with oil, basil, and salt.
