Braised Pork in Rustic Tomato Sauce
Egg Noodles and Basil Green Beans
Ingredients
- ¾ lb pork tenderloin, cut into ¼-inch-thick slices
- ¼ tsp salt, divided
- ¼ tsp pepper
- 1½ Tbsp olive oil, divided
- ½ (8-oz) pkg sliced mushrooms
- 1 clove garlic, minced
- 1 (14.5-oz) can whole tomatoes, undrained and chopped
- ¼ cup pitted kalamata olives, halved
- ½ tsp dried oregano
- Chopped fresh basil (optional)
Instructions
- Sprinkle pork with ⅛ tsp each salt and pepper. Cook in ½ Tbsp hot oil in a large, deep skillet over medium-high heat 1 to 2 minutes per side or until browned; remove from skillet, and keep warm.
- Cook mushrooms in 1 Tbsp hot oil in skillet 8 minutes or until browned and tender. Return pork to skillet; add garlic, tomatoes, olives, oregano, and ⅛ tsp salt. Cook 15 minutes or until sauce is thickened. Serve sprinkled with basil, if desired.
Side Dish Ingredients
- 3 oz yolk-free egg noodles
- ¾ lb green beans, trimmed
- 1½ Tbsp extra virgin olive oil
- 1 Tbsp chopped fresh basil
- ⅛ tsp salt
Side Dish Instructions
- Cook noodles according to package directions.
- Steam green beans in a steamer basket over boiling water 6 minutes or until crisp-tender.
- Toss beans with oil, basil, and salt.
