Greek Salad Pizza

Ingredients

  • 1 (15-oz) pkg already-rolled out bakery pizza dough
  • 1 Tbsp olive oil
  • 1½ cups shredded mozzarella cheese, divided
  • 2 cups baby spinach
  • 3 Roma tomatoes, thinly sliced
  • ½ red onion, thinly sliced
  • ½ (12-oz) jar marinated artichoke hearts, drained and quartered
  • ⅓ cup halved pitted kalamata olives
  • ⅓ cup sliced pepperoncini peppers
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 450°F. Roll out pizza crust into a 16-inch round on a greased baking sheet; prick dough all over with a fork. Brush with oil. Bake 8 minutes.
  2. Top partially-baked pizza with 1 cup mozzarella, spinach, tomatoes, onion, artichokes, olives, and pepperoncini peppers.
  3. Sprinkle pizza with feta and remaining ½ cup mozzarella. Bake 10 minutes or until crust is golden. Cut pizza into 6 slices to serve.
