Greek Turkey Roll-Ups
Shaved Zucchini SaladIngredients
- 2 cups arugula
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- ¼ tsp dried oregano
- 1 lb low-sodium roasted turkey breast slices
- ½ cup thinly sliced English cucumber
- ¼ cup thinly sliced roasted red bell pepper
- ¼ cup thinly sliced red onion
- ¼ cup sliced pitted kalamata olives
Instructions
- Toss together arugula, oil, vinegar, and oregano; set aside.
- Arrange turkey in 4 stacks. Top with cucumber, red pepper, onion, olives, and arugula mixture on one side of turkey stacks; roll up. Cut in half, if desired.

- 2 tsp lemon juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Use a Y-shaped vegetable peeler to cut zucchini into long, thin ribbons.
- Combine zucchini, oil, lemon juice, salt, and pepper in a large bowl; toss to coat.
