Greek Turkey Roll-Ups

Shaved Zucchini Salad

Ingredients

  • 2 cups arugula
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • ¼ tsp dried oregano
  • 1 lb low-sodium roasted turkey breast slices 
  • ½ cup thinly sliced English cucumber
  • ¼ cup thinly sliced roasted red bell pepper
  • ¼ cup thinly sliced red onion
  • ¼ cup sliced pitted kalamata olives

Instructions

  1. Toss together arugula, oil, vinegar, and oregano; set aside.
  2. Arrange turkey in 4 stacks. Top with cucumber, red pepper, onion, olives, and arugula mixture on one side of turkey stacks; roll up. Cut in half, if desired.

  • 2 large zucchini 
  • 2 Tbsp olive oil
  • 2 tsp lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Use a Y-shaped vegetable peeler to cut zucchini into long, thin ribbons.
  2. Combine zucchini, oil, lemon juice, salt, and pepper in a large bowl; toss to coat.
