Mixed Greens with Apple Cider Vinaigrette

Ingredients

  • 1 lemon
  • 1 (7-oz) can boneless, skinless pink salmon
  • ⅓ cup almond flour
  • 1 egg
  • 1 Tbsp finely chopped fresh chives
  • ½ Tbsp chopped fresh dill
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1½ Tbsp olive oil, divided
  • ¼ cup crème fraîche (or use sour cream)

Instructions

  1. Grate zest from lemon. Mix together salmon, almond flour, egg, chives, dill, lemon zest, salt, and pepper. Shape into 6 patties.
  2. Cook patties in hot oil in a large cast-iron skillet over medium-high heat 3 to 4 minutes per side or until firm and done.
  3. Serve croquettes over Mixed Greens with Apple Cider Vinaigrette recipe and crème fraîche.

Side Dish Ingredients

  • ½ (5-oz) pkg mixed baby greens
  • ½ cucumber, sliced
  • 1 Tbsp apple cider vinegar
  • ¼ tsp Dijon mustard
  • 1 Tbsp chopped shallot
  • 1½ Tbsp extra virgin olive oil
  • ¼tsp kosher salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Combine greens and cucumber in a bowl.
  2. Whisk together vinegar, mustard, shallot, oil, salt, and pepper; drizzle over greens, and toss.
