Herbed Salmon Croquettes
Mixed Greens with Apple Cider VinaigretteIngredients
- 1 lemon
- 1 (7-oz) can boneless, skinless pink salmon
- ⅓ cup almond flour
- 1 egg
- 1 Tbsp finely chopped fresh chives
- ½ Tbsp chopped fresh dill
- ¼ tsp kosher salt
- ¼ tsp pepper
- 1½ Tbsp olive oil, divided
- ¼ cup crème fraîche (or use sour cream)
Instructions
- Grate zest from lemon. Mix together salmon, almond flour, egg, chives, dill, lemon zest, salt, and pepper. Shape into 6 patties.
- Cook patties in hot oil in a large cast-iron skillet over medium-high heat 3 to 4 minutes per side or until firm and done.
- Serve croquettes over Mixed Greens with Apple Cider Vinaigrette recipe and crème fraîche.
Side Dish Ingredients
- ½ (5-oz) pkg mixed baby greens
- ½ cucumber, sliced
- 1 Tbsp apple cider vinegar
- ¼ tsp Dijon mustard
- 1 Tbsp chopped shallot
- 1½ Tbsp extra virgin olive oil
- ¼tsp kosher salt
- ⅛ tsp pepper
Side Dish Instructions
- Combine greens and cucumber in a bowl.
- Whisk together vinegar, mustard, shallot, oil, salt, and pepper; drizzle over greens, and toss.
