Lamb Kofta Bowls

Ingredients

  • ½ lb ground lamb (or use ground beef)
  • 1 tsp garam masala
  • 1 clove garlic, minced
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ½ (20-oz) pkg frozen riced cauliflower
  • ½ Tbsp olive oil
  • 2 Tbsp chopped fresh mint, divided
  • ¼ cup plain whole milk Greek yogurt
  • ½ cup chopped English cucumber
  • ½ tsp lemon zest
  • ½ Tbsp lemon juice
  • ⅔ cup grape tomatoes, halved
  • 2 cups baby spinach
  • 1½ Tbsp red wine vinaigrette

Instructions

  1. Preheat broiler. Combine lamb, garam masala, garlic, ⅛ tsp salt, and ⅛ tsp pepper in a bowl; shape into 4 oblong meatballs.
  2. Place meatballs on a lightly greased foil-lined rimmed baking sheet. Broil 8 to 10 minutes or until meatballs are done, turning after 5 minutes.
  3. Meanwhile, cook cauliflower according to package directions; stir in oil and 1 Tbsp mint.
  4. Stir together yogurt, cucumber, 1 Tbsp mint, lemon zest, lemon juice, ⅛ tsp salt, and ⅛ tsp pepper in a small bowl. Combine spinach and vinaigrette in a second bowl; toss.
  5. Divide cauliflower rice and spinach between 2 bowls; top with meatballs, tomatoes, and yogurt sauce.
