Lamb Kofta Bowls
Ingredients
- ½ lb ground lamb (or use ground beef)
- 1 tsp garam masala
- 1 clove garlic, minced
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ½ (20-oz) pkg frozen riced cauliflower
- ½ Tbsp olive oil
- 2 Tbsp chopped fresh mint, divided
- ¼ cup plain whole milk Greek yogurt
- ½ cup chopped English cucumber
- ½ tsp lemon zest
- ½ Tbsp lemon juice
- ⅔ cup grape tomatoes, halved
- 2 cups baby spinach
- 1½ Tbsp red wine vinaigrette
Instructions
- Preheat broiler. Combine lamb, garam masala, garlic, ⅛ tsp salt, and ⅛ tsp pepper in a bowl; shape into 4 oblong meatballs.
- Place meatballs on a lightly greased foil-lined rimmed baking sheet. Broil 8 to 10 minutes or until meatballs are done, turning after 5 minutes.
- Meanwhile, cook cauliflower according to package directions; stir in oil and 1 Tbsp mint.
- Stir together yogurt, cucumber, 1 Tbsp mint, lemon zest, lemon juice, ⅛ tsp salt, and ⅛ tsp pepper in a small bowl. Combine spinach and vinaigrette in a second bowl; toss.
- Divide cauliflower rice and spinach between 2 bowls; top with meatballs, tomatoes, and yogurt sauce.
