Spinach-Artichoke Grilled Cheese
Vegetable SticksIngredients
- 6 slices organic sourdough bread
- 6 slices Havarti cheese with dill
- ½ (8-oz) carton vegetarian spinach artichoke dip
- ½ (6-oz) pkg baby spinach
- ¼ cup butter, softened
Instructions
- Top 3 bread slices each with 1 slice cheese and ¼ cup artichoke dip. Arrange about 1 cup spinach leaves on each sandwich, and top with remaining cheese. Add remaining bread. Spread butter on outsides of sandwiches.
- Cook sandwiches in a large nonstick skillet over medium-low heat 4 to 5 minutes per side or until bread is toasted and cheese is melted.
Side Dish Ingredients
- 2 carrots, sliced into sticks
- 2 stalks celery, sliced into sticks
- ½ red bell pepper, cut into strips
Side Dish Instructions
- Serve carrots, celery, and bell pepper strips alongside sandwiches.
