Spicy Black Bean Soup
Avocado-Citrus Toss
Ingredients
- 1 cup chopped onion
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1 cup low-sodium vegetable broth
- 1 (10-oz) can diced tomatoes with green chiles
- 1 (15-oz) can low-sodium black beans, drained and rinsed
- ½ tsp ground cumin
- ¼ cup vegan sour cream
- ¼ cup chopped fresh cilantro
Instructions
- Cook onion and garlic in hot oil in a Dutch oven over medium heat 5 minutes or until tender; add broth, tomatoes, beans, and cumin.
- Cook 10 minutes or until bubbly; mash beans slightly for a thicker consistency. Top with sour cream and cilantro.

- 1 avocado, sliced
- 1 grapefruit, peeled and sliced
- 1 navel orange, peeled and sliced
Side Dish Instructions
- Combine all ingredients in a small bowl; chill until ready to serve.
