Spicy Black Bean Soup

Ingredients

  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 cup low-sodium vegetable broth
  • 1 (10-oz) can diced tomatoes with green chiles 
  • 1 (15-oz) can low-sodium black beans, drained and rinsed
  • ½ tsp ground cumin
  • ¼ cup vegan sour cream
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook onion and garlic in hot oil in a Dutch oven over medium heat 5 minutes or until tender; add broth, tomatoes, beans, and cumin.
  2. Cook 10 minutes or until bubbly; mash beans slightly for a thicker consistency. Top with sour cream and cilantro.

Side Dish Ingredients

  • 1 avocado, sliced
  • 1 grapefruit, peeled and sliced
  • 1 navel orange, peeled and sliced

Side Dish Instructions

  1. Combine all ingredients in a small bowl; chill until ready to serve.
