Bacon-Wrapped Pork Loin
Kale-Radicchio SaladIngredients
- 2 tsp kosher salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chili powder
- ¼ tsp ground cinnamon
- ⅛ tsp grated nutmeg
- ⅛ tsp cayenne pepper
- 1 (2-lb) pork loin, trimmed
- 1 Tbsp pure maple syrup
- ½ (12-oz) pkg uncured bacon
Instructions
- Stir together first 7 ingredients in a small bowl. Rub pork with syrup; sprinkle all over with spice mixture.
- Wrap pork with bacon, 1 strip at a time, completely covering pork; let stand at room temperature 30 minutes.
- Preheat oven to 350°F. Place pork on a rack in a broiler pan rubbed with coconut oil.
- Bake 1 to 1½ hours or until a meat thermometer inserted reads 145°F. Let stand 10 minutes before slicing.
Side Dish Ingredients
- 2 cups chopped kale
- 2 cups chopped radicchio
- 1½ Tbsp extra virgin olive oil
- 1½ Tbsp red wine vinegar
- ½ Tbsp Dijon mustard
- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a large bowl; let stand 10 minutes to wilt kale.
