Bacon-Wrapped Pork Loin

Ingredients

  • 2 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • ¼ tsp ground cinnamon
  • ⅛ tsp grated nutmeg
  • ⅛ tsp cayenne pepper
  • 1 (2-lb) pork loin, trimmed
  • 1 Tbsp pure maple syrup
  • ½ (12-oz) pkg uncured bacon

Instructions

  1. Stir together first 7 ingredients in a small bowl. Rub pork with syrup; sprinkle all over with spice mixture.
  2. Wrap pork with bacon, 1 strip at a time, completely covering pork; let stand at room temperature 30 minutes.
  3. Preheat oven to 350°F. Place pork on a rack in a broiler pan rubbed with coconut oil.
  4. Bake 1 to 1½ hours or until a meat thermometer inserted reads 145°F. Let stand 10 minutes before slicing.

Side Dish Ingredients

  • 2 cups chopped kale
  • 2 cups chopped radicchio
  • 1½ Tbsp extra virgin olive oil
  • 1½ Tbsp red wine vinegar
  • ½ Tbsp Dijon mustard
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a large bowl; let stand 10 minutes to wilt kale.
