Pizza Chicken
Fiery BroccoliniIngredients
- 2 boneless, skinless chicken breasts
- ¼ tsp dried oregano
- 1 Tbsp olive oil
- 1 (9-oz) pkg refrigerated linguine (see Note)
- ½ cup freshly grated Parmesan cheese, divided
- ½ (24-oz) jar marinara sauce
- ¾ cup shredded mozzarella cheese
- 12 pepperoni slices
- ¼ cup torn fresh basil (optional)
Instructions
- Sprinkle chicken with oregano. Season lightly with salt and pepper. Cook chicken in hot oil in a cast-iron skillet over medium-high heat 4 to 5 minutes per side or until browned and done.
- Meanwhile, cook pasta according to package directions. Season with salt, and drizzle with olive oil. Sprinkle with ¼ cup Parmesan cheese.
- Preheat oven broiler. Pour ½ cup marinara sauce around chicken; cook 1 minute. Sprinkle with mozzarella, ¼ cup Parmesan and pepperoni. Transfer to oven; broil on second oven shelf 1 to 2 minutes or until browned. Sprinkle with basil, if desired.
Side Dish Ingredients
- 1 bunch Broccolini
- 1½ Tbsp olive oil
- ½ Tbsp minced garlic
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Cook Broccolini in a small amount of water in a microwave-safe bowl 2 to 3 minutes or until crisp-tender. Drain.
- Heat oil, garlic, and crushed red pepper in a glass measuring cup 15 to 20 seconds or until hot and fragrant; drizzle over Broccolini, and toss. Season with salt to taste.
