Espresso-Chili Breakfast Steak

Ingredients

  • 1 Tbsp finely ground espresso powder (or other finely ground coffee)
  • ½ Tbsp chili powder
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 lb flank steak
  • 3 Tbsp olive oil

Instructions

  1. Combine espresso powder, chili powder, cumin, salt, and pepper; rub all over steak.
  2. Cook steak in hot oil in a large nonstick skillet over medium-high heat 4 to 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.

  • 4 heirloom tomatoes, cut into wedges (or use Roma tomatoes)
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Combine tomatoes, oil, vinegar, salt, and pepper; toss.
