Ingredients

  • ½ cup mayonnaise
  • 1 Tbsp chopped roasted red pepper
  • 1 Tbsp chopped fresh basil
  • 1 tsp lemon juice
  • ½ tsp pepper
  • 1 lb low-sodium roasted turkey breast slices
  • 1 cup arugula
  • 1 small zucchini, cut into thin sticks
  • ½ cup shredded carrots

Instructions

  1. Combine mayonnaise, red pepper, basil, lemon juice, and pepper.
  2. Arrange turkey in 8 stacks. Top each with red pepper spread, arugula, zucchini, and carrot. Roll up; secure with wooden picks.
