Baked Meatballs and Whole-Grain Linguine

Ingredients

  • 1 lb ground round
  • ½ lb lean ground pork (or use another ½ lb ground round)
  • ¼ cup finely chopped onion
  • 2 Tbsp chopped fresh basil
  • 1 Tbsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 1 large egg, lightly beaten
  • 1 (24-oz) jar marinara sauce
  • 12 oz whole-grain linguine
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Line a rimmed baking sheet with foil; place a wire cooling rack on foil.
  2. Stir together beef, pork, onion, basil, Italian seasoning, salt, and pepper in a large bowl. Add beaten egg, stirring to combine.
  3. Shape mixture into 2-inch balls; place on wire rack. Bake 20 minutes.
  4. Transfer meatballs to a large skillet; add marinara sauce, and cook over medium heat 5 minutes.
  5. Meanwhile, cook pasta according to package directions; toss with meatballs and sauce. Sprinkle with cheese.

  • ¼ cup olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 6 cups organic baby spinach
  • 1 red onion, very thinly sliced

Side Dish Instructions

  1. Whisk together oil, lemon juice, honey, garlic, salt, and pepper in a small bowl.
  2. Place spinach in a large bowl. Drizzle dressing over spinach, and toss. Top with onion.
