Apricot-Mustard Pork Chops
Herbed Zucchini Couscous
Ingredients
- 6 bone-in pork loin chops
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- ¼ cup natural apricot preserves
- 2 Tbsp grainy Dijon mustard
- 1 Tbsp low-sodium soy sauce
Instructions
- Preheat grill to medium-high heat. Brush pork chops with oil; sprinkle with salt and pepper. Combine preserves, mustard, and soy sauce in a small bowl.
- Grill chops, covered, 5 minutes, turning once. Turn pork chops again, and brush with half of preserves mixture.
- Grill 2 minutes; turn chops, and brush with remaining mixture. Grill 3 minutes longer or until pork is done.
Side Dish Ingredients
- 2 cloves garlic, minced
- 2 zucchini, chopped
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 2 (10-oz) pkg whole wheat couscous
- 3 Tbsp chopped fresh basil
Side Dish Instructions
- Sauté garlic, zucchini, salt, and pepper in hot oil in a saucepan over medium-high heat 5 minutes or until zucchini is tender; add couscous and water according to package directions.
- Stir in basil just before serving.
