Apricot-Mustard Pork Chops

Ingredients

  • 6 bone-in pork loin chops
  • 2 Tbsp olive oil
  • ½ tsp salt
  •  ½ tsp pepper
  • ¼ cup natural apricot preserves
  • 2 Tbsp grainy Dijon mustard
  • 1 Tbsp low-sodium soy sauce

Instructions

  1. Preheat grill to medium-high heat. Brush pork chops with oil; sprinkle with salt and pepper. Combine preserves, mustard, and soy sauce in a small bowl.
  2. Grill chops, covered, 5 minutes, turning once. Turn pork chops again, and brush with half of preserves mixture.
  3. Grill 2 minutes; turn chops, and brush with remaining mixture. Grill 3 minutes longer or until pork is done.

Side Dish Ingredients

  • 2 cloves garlic, minced
  • 2 zucchini, chopped
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 2 (10-oz) pkg whole wheat couscous
  • 3 Tbsp chopped fresh basil

Side Dish Instructions

  1. Sauté garlic, zucchini, salt, and pepper in hot oil in a saucepan over medium-high heat 5 minutes or until zucchini is tender; add couscous and water according to package directions.
  2. Stir in basil just before serving.
