Chicken Waldorf Salad

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup chopped walnuts
  • 2 organic Granny Smith apples, chopped
  • 2 organic Honeycrisp (or other sweet) apples, chopped
  • 2 stalks organic celery, chopped
  • ½ cup organic raisins
  • ½ cup plain Greek yogurt
  • ½ cup olive-oil mayonnaise
  • ¼ cup chopped fresh parsley
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp honey

Instructions

  1. Preheat oven to 375°F. Place chicken in a baking dish coated with cooking spray; sprinkle with salt and pepper.
  2. Bake 25 to 30 minutes or until chicken is done. Cool; cut chicken into small cubes.
  3. Toast nuts in a dry skillet over medium heat until fragrant. Combine chicken, apples, celery, raisins, and nuts in a bowl.
  4. Whisk together yogurt, mayonnaise, parsley, lemon juice, and honey; pour dressing over chicken, and toss. Chill at least 1 hour.

  • 1 (6-oz) pkg stoneground wheat crackers
