Baked Orange-Thyme Salmon

Ingredients

  • 2 cloves garlic, minced
  • 1 Tbsp chopped fresh thyme
  • 1 Tbsp fresh orange juice
  • ½ tsp salt
  • ½ tsp pepper
  • 6 (6-oz) salmon fillets
  • 2 Tbsp avocado oil

Instructions

  1. Preheat oven to 450°F. Combine garlic, thyme, orange juice, salt, and pepper in a small bowl. Rub mixture on fish, and place on a parchment paper-lined rimmed baking sheet.
  2. Bake 12 minutes or until fish flakes with a fork.

  • 2 lb asparagus, trimmed
  • 2 cloves garlic, minced
  • 1 Tbsp avocado oil
  • 1 tsp lemon zest
  • ½ tsp salt

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a large rimmed baking sheet. Bake 8 to 10 minutes or until asparagus is browned and crisp-tender.
