Lemon-Salmon and Asparagus Pappardelle

Ingredients
- ½ lemon
- ½ Tbsp olive oil
- 1 (½-lb) salmon fillet
- ¾ tsp garlic salt
- ¾ tsp pepper
- ½ (16 to 17.6-oz) pkg pappardelle pasta
- ½ lb asparagus, cut into 1-inch pieces
- ½ (6.5-oz) pkg spreadable garlic and herb cheese
- ¼ cup freshly shaved Parmesan cheese
Instructions
- Preheat grill to medium-high. Grate zest and squeeze juice from lemon. Rub oil over fish; sprinkle with garlic salt and pepper. Grill 4 to 5 minutes per side or until fish flakes with a fork. Break fish into large pieces.
- Cook pasta according to package directions in a large pot or Dutch oven, adding asparagus during last 2 minutes of cooking. Drain, reserving ½ cup pasta water, and return to pot.
- Reduce heat to medium-low; stir in spreadable cheese, lemon zest, lemon juice, and enough pasta water to make a thin sauce; cook 2 minutes or until thoroughly heated. Toss fish with pasta just before serving; sprinkle with Parmesan.
