Brined Apple-Rosemary Pork Chops

Ingredients

  • 4 cups no-sugar-added apple juice
  • ¼ cup kosher salt
  • ¼ cup sugar
  • 6 sprigs fresh rosemary
  • 4 cloves garlic, peeled and halved
  • 2 lb boneless pork sirloin chops

Instructions

  1. Combine apple juice, salt, sugar, rosemary, and garlic in a large zip-top resealable plastic bag. Add pork chops, seal bag, and chill at least 4 hours or up to 2 days.
  2. Preheat grill or grill pan to medium-high heat. Remove pork from brine; discard brine. Pat pork dry with paper towels. Grill pork, covered, 5 to 6 minutes per side or to desired doneness. Let stand 5 minutes before serving.

  • 6 sweet red apples, peeled and chopped
  • ½ cup water
  • ¼ cup sugar
  • 1 Tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1 (22-oz) bag frozen broccoli with cheese sauce

Side Dish Instructions

  1. Combine apples, water, sugar, lemon juice, and cinnamon in a large saucepan. Bring to a boil, reduce heat, and simmer over low heat 30 to 40 minutes or until apples are soft.
  2. Mash with a potato masher to desired consistency.
  3. Steam broccoli according to package directions.
