Pork Fried Rice

Ingredients

  • 1 (3.5-oz) pouch boil-in-bag brown rice
  • ½ lb ground pork
  • ½ cup chopped onion
  • 2 tsp vegetable oil
  • 1½ cups frozen peas and carrots, thawed
  • 1 large egg, lightly beaten
  • 2 Tbsp low-sodium soy sauce

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook pork and onion in hot oil in a large skillet over medium-high heat 6 minutes. Add peas and carrots; cook 5 minutes or until tender. Add rice; cook 2 minutes.
  3. Push rice mixture to the side. Add egg to center of skillet; cook, stirring constantly, until scrambled. Combine egg with rice mixture; stir in soy sauce.
