Peach-Glazed Pork Chops

Ingredients

  • ½ lb boneless pork chops
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp olive oil
  • ¼ cup peach preserves
  • 2 tsp apple cider vinegar
  • ⅛ tsp dried thyme (or use dried crushed rosemary)

Instructions

  1. Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 4 minutes per side or until browned.
  2. Reduce heat to medium; add preserves, vinegar, and thyme. Cook 3 to 4 minutes or until glaze is thickened and pork is done.

  • ½ (12-oz) pkg frozen thin green beans
  • 1 Tbsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

  1. Cook potatoes and green beans according to package directions. Add oil, salt, and pepper to beans, tossing to coat.
