White Bean Shakshuka
Warm Naan
Ingredients
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 Tbsp olive oil
- 3 cloves garlic, minced
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 2 (28-oz) cans San Marzano tomatoes, undrained
- 1 (15-oz) can cannellini beans, drained and rinsed
- 6 large eggs
- ¾ cup crumbled feta cheese
Instructions
- Cook onion and bell pepper in hot oil in a large skillet over medium heat 5 to 6 minutes or until tender. Add garlic, paprika, and cumin; cook, 1 minute, stirring.
- Stir in tomatoes, breaking into bite-size pieces using a wooden spoon. Stir in beans; bring to a simmer, and cook 5 minutes. Season with salt and pepper, if desired.
- Make 6 indentations in tomato mixture using spoon. Crack eggs into indentations. Cover and cook 8 to 10 minutes or until eggs are cooked to desired doneness. Sprinkle with cheese.

- 1 (8.8-oz) pkg whole grain naan, warmed
Side Dish Instructions
- Cut naan into wedges.
