White Bean Shakshuka

Ingredients

  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 (28-oz) cans San Marzano tomatoes, undrained
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 6 large eggs
  • ¾ cup crumbled feta cheese

Instructions

  1. Cook onion and bell pepper in hot oil in a large skillet over medium heat 5 to 6 minutes or until tender. Add garlic, paprika, and cumin; cook, 1 minute, stirring.
  2. Stir in tomatoes, breaking into bite-size pieces using a wooden spoon. Stir in beans; bring to a simmer, and cook 5 minutes. Season with salt and pepper, if desired.
  3. Make 6 indentations in tomato mixture using spoon. Crack eggs into indentations. Cover and cook 8 to 10 minutes or until eggs are cooked to desired doneness. Sprinkle with cheese.

  • 1 (8.8-oz) pkg whole grain naan, warmed

Side Dish Instructions

  1. Cut naan into wedges.
