Coconut Chicken

Cucumber-Carrot Jasmine Rice

Ingredients

  • 1½ lb boneless, skinless chicken thighs, cubed
  • ½ tsp ground ginger
  • ½ tsp salt
  • 2 Tbsp olive oil
  • 1 (13.5-oz) can coconut milk
  • 2 Tbsp minced garlic
  • ½ cup chopped fresh cilantro

Instructions

  1. Sprinkle chicken with ginger and salt. Cook chicken in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned.
  2. Add coconut milk and garlic; cook 5 minutes or until thickened and chicken is done. Sprinkle with cilantro.

Side Dish Ingredients

  • 3 (3.5-oz) pkg boil-in-bag jasmine rice
  • 3 cups shredded carrots
  • 1 cucumber, thinly sliced

Side Dish Instructions

  1. Cook rice according to package directions. Stir in carrots and cucumber.
