Creamy Chicken, Brown Rice, and Broccoli Bake

Ingredients

  • ½ (10-oz) pkg frozen whole-grain brown rice
  • ¾ lb boneless, skinless chicken breasts
  • ½ Tbsp olive oil
  • ½ (12-oz) pkg broccoli florets
  • ¾ cup chopped onion
  • 1 cup low-sodium chicken broth
  • ¼ cup sour cream
  • ¾ cup shredded white Cheddar cheese, divided (or use other Cheddar)
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 400°F. Cook rice according to package directions.
  2. Meanwhile, drizzle chicken with oil in a lightly greased baking dish. Bake 25 minutes or until done. Cool, shred chicken, and set aside.
  3. Meanwhile, microwave broccoli according to package directions.
  4. Stir together rice, broccoli, chicken, onion, broth, sour cream, ½ cup cheese, salt, and pepper. Spoon into a small baking dish coated with cooking spray; sprinkle with ¼ cup cheese.
  5. Bake 20 minutes or until bubbly.

  • 1 organic nectarine, sliced
  • ½ pint blueberries, rinsed and well chilled

  1. Combine nectarine and blueberries in a bowl.
