Greek Spinach Grilled Cheese Sandwiches

Ingredients

  • 2 (10-oz) pkg frozen chopped spinach, thawed
  • 1½ cups shredded part-skim mozzarella cheese
  • 1½ cups crumbled feta cheese
  • ¾ cup olive-oil mayonnaise, divided
  • 1½ Tbsp chopped fresh oregano (or use 1 tsp dried)
  • ¾ tsp crushed red pepper
  • 12 slices multigrain bakery bread
  • 4 Tbsp honey, warmed

Instructions

  1. Squeeze spinach dry using paper towels. Combine spinach, both cheeses, 3 Tbsp mayonnaise, oregano, and red pepper in a bowl; stir until blended.
  2. Top 6 bread slices with cheese mixture; cover with remaining bread slices. Brush outsides of sandwiches with remaining mayonnaise.
  3. Cook sandwiches, in 2 batches, in a large nonstick skillet over medium heat 3 to 4 minutes per side or until golden and cheese is melted. Serve sandwiches with honey.

Side Dish Ingredients

  • 3 large heirloom tomatoes, sliced
  • 3 Tbsp balsamic vinegar
  • 1½ Tbsp extra virgin olive oil
  • 1½ Tbsp chopped fresh oregano
  • ½ tsp pepper

Side Dish Instructions

  1. Arrange tomato slices on a plate. Drizzle with vinegar and oil; sprinkle with oregano and pepper.
