Greek Spinach Grilled Cheese Sandwiches
Balsamic-Oregano TomatoesIngredients
- 2 (10-oz) pkg frozen chopped spinach, thawed
- 1½ cups shredded part-skim mozzarella cheese
- 1½ cups crumbled feta cheese
- ¾ cup olive-oil mayonnaise, divided
- 1½ Tbsp chopped fresh oregano (or use 1 tsp dried)
- ¾ tsp crushed red pepper
- 12 slices multigrain bakery bread
- 4 Tbsp honey, warmed
Instructions
- Squeeze spinach dry using paper towels. Combine spinach, both cheeses, 3 Tbsp mayonnaise, oregano, and red pepper in a bowl; stir until blended.
- Top 6 bread slices with cheese mixture; cover with remaining bread slices. Brush outsides of sandwiches with remaining mayonnaise.
- Cook sandwiches, in 2 batches, in a large nonstick skillet over medium heat 3 to 4 minutes per side or until golden and cheese is melted. Serve sandwiches with honey.
Side Dish Ingredients
- 3 large heirloom tomatoes, sliced
- 3 Tbsp balsamic vinegar
- 1½ Tbsp extra virgin olive oil
- 1½ Tbsp chopped fresh oregano
- ½ tsp pepper
Side Dish Instructions
- Arrange tomato slices on a plate. Drizzle with vinegar and oil; sprinkle with oregano and pepper.
