Shredded Pork Tostadas

Ingredients
- 3 burrito-size flour tortillas
- 1½ Tbsp olive oil
- Reserved cooked pork (from Chili-Rubbed Pork Roast recipe), heated
- ½ (8-oz) pkg shredded iceberg lettuce
- ½ red onion, thinly sliced
- 1 cup shredded Colby-Jack cheese
- ¼ cup sour cream
- ⅓ cup fresh salsa
Instructions
- Preheat oven to 425°F.
- Brush tortillas with oil; place on a baking sheet. Bake 8 minutes or until crispy.
- Top tortillas with pork, lettuce, onion, cheese, sour cream, and salsa.
