Cowboy Beef Chili

Ingredients

  • ¾ lb beef stew meat
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • 1 small onion, chopped
  • ½ green bell pepper, chopped
  • 1 clove garlic, minced
  • 1 (15-oz) can pinto beans
  • ½ (22-oz) can steakhouse grilling beans
  • 1 cup low-sodium beef broth
  • ¾ cup canned fire-roasted diced tomatoes
  • ½ tsp dried oregano

Instructions

  1. Sprinkle beef with pepper. Cook in hot oil in a large skillet over medium-high heat 5 minutes or until browned on all sides. Transfer to a greased 3- to 4-quart slow cooker.
  2. Add onion and remaining ingredients. Cover and cook on LOW 8 to 9 hours or until beef is very tender; shred or chop beef, if desired.

Side Dish Ingredients

  • 1 (7-oz) pkg cornbread mix

Side Dish Instructions

  1. Bake cornbread according to package directions. Reserve half for another meal.
