Scrambled Eggs with Spinach, Ham, and Goat Cheese

Ingredients

  • ½ lb low-sodium ham, diced
  • 2 Tbsp olive oil, divided
  • 1 (5-oz) pkg baby spinach
  • 8 large eggs
  • ½ tsp garlic powder
  • ½ cup crumbled goat cheese

Instructions

  1. Cook ham in 1 Tbsp hot oil in a large nonstick skillet over medium-heat 2 to 3 minutes or until lightly browned.
  2. Stir in spinach; cook 1 to 2 minutes or until wilted. Remove from skillet; divide among 4 plates.
  3. Add 1 Tbsp oil to pan; reduce heat to medium.
  4. Whisk together eggs and garlic powder.
  5. Add egg mixture to pan. Cook 4 minutes or until eggs are thickened and set, stirring constantly. Spoon over spinach, and top with cheese.
