Scrambled Eggs with Spinach, Ham, and Goat Cheese
Ingredients
- ½ lb low-sodium ham, diced
- 2 Tbsp olive oil, divided
- 1 (5-oz) pkg baby spinach
- 8 large eggs
- ½ tsp garlic powder
- ½ cup crumbled goat cheese
Instructions
- Cook ham in 1 Tbsp hot oil in a large nonstick skillet over medium-heat 2 to 3 minutes or until lightly browned.
- Stir in spinach; cook 1 to 2 minutes or until wilted. Remove from skillet; divide among 4 plates.
- Add 1 Tbsp oil to pan; reduce heat to medium.
- Whisk together eggs and garlic powder.
- Add egg mixture to pan. Cook 4 minutes or until eggs are thickened and set, stirring constantly. Spoon over spinach, and top with cheese.
