Easy Vegetable and Beef Soup

Ingredients
- 1½ lb ground beef
- 2 Tbsp olive oil
- 1 cup chopped onion
- 1 cup chopped celery
- 2 cloves garlic, minced
- 2 tsp Italian seasoning
- 1 (32-oz) carton beef broth
- 2 (14-oz) cans diced tomatoes
- 1 (16-oz) pkg frozen mixed vegetables
- 2 cups water
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup freshly shredded Cheddar cheese
Instructions
- Cook beef in hot oil in a Dutch oven over medium heat 4 to 5 minutes or until browned, stirring to crumble.
- Add onion, celery, garlic, and Italian seasoning; cook 5 minutes or until vegetables are tender.
- Stir in broth, tomatoes, vegetables, water, salt, and pepper. Bring to a boil; reduce heat, and simmer 20 minutes or until vegetables are tender.
- Top each serving with cheese.
