Easy Vegetable and Beef Soup

Ingredients

  • 1½ lb ground beef
  • 2 Tbsp olive oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1 (32-oz) carton beef broth
  • 2 (14-oz) cans diced tomatoes
  • 1 (16-oz) pkg frozen mixed vegetables
  • 2 cups water
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup freshly shredded Cheddar cheese

Instructions

  1. Cook beef in hot oil in a Dutch oven over medium heat 4 to 5 minutes or until browned, stirring to crumble.
  2. Add onion, celery, garlic, and Italian seasoning; cook 5 minutes or until vegetables are tender.
  3. Stir in broth, tomatoes, vegetables, water, salt, and pepper. Bring to a boil; reduce heat, and simmer 20 minutes or until vegetables are tender.
  4. Top each serving with cheese.
