Ingredients

  • 5 Tbsp olive oil
  • 3 Tbsp balsamic vinegar
  • ½ tsp pepper
  • 2 (5-oz) pkg mixed greens
  • 1 (6-oz) jar quartered artichoke hearts, drained
  • 1 pint grape tomatoes, halved
  • ½ cup pitted kalamata olives
  • ½ lb sliced low-sodium ham, coarsely chopped
  • ¼ lb sliced low-sodium salami, coarsely chopped
  • 1 cucumber, halved and thinly sliced

Instructions

  1. Whisk together oil, vinegar, and pepper in a large bowl. Add remaining ingredients; toss to coat.
