Lemony Broccoli Caesar Salad

- 1 head broccoli
- 1 lemon
- ½ cup homestyle Caesar dressing
- ½ cup panko breadcrumbs (preferably whole wheat)
- 1½ Tbsp olive oil, divided
- 1½ lb boneless, skinless chicken breasts
- 1½ Tbsp chopped fresh rosemary
- ¾ tsp freshly ground pepper
- ½ tsp kosher salt
- 2 romaine lettuce hearts, sliced
- ½ cup freshly shaved Parmesan cheese
Instructions
- Cut stalks from broccoli head; shave into thin ribbons using a Y-shape vegetable peeler. Coarsely chop broccoli crowns. Grate zest and squeeze juice from lemon.
- Toss together broccoli, dressing, lemon zest, and juice in a large bowl; cover, and chill 15 to 30 minutes.
- Meanwhile, toast panko in ½ Tbsp hot oil in a large skillet over medium heat 3 to 4 minutes or until golden, stirring occasionally. Remove from skillet.
- Sprinkle chicken with rosemary, pepper, and salt. Cook chicken, in batches if necessary, in 1 Tbsp hot oil in skillet over medium-high heat 5 to 6 minutes per side or until done; cool slightly, and slice chicken.
- Toss lettuce, panko, and cheese with broccoli mixture. Serve chicken over salad.
