Lemony Broccoli Caesar Salad

Ingredients

  • 1 head broccoli
  • 1 lemon
  • ½ cup homestyle Caesar dressing
  • ½ cup panko breadcrumbs (preferably whole wheat)
  • 1½ Tbsp olive oil, divided
  • 1½ lb boneless, skinless chicken breasts
  • 1½ Tbsp chopped fresh rosemary
  • ¾ tsp freshly ground pepper
  • ½ tsp kosher salt
  • 2 romaine lettuce hearts, sliced
  • ½ cup freshly shaved Parmesan cheese

Instructions

  1. Cut stalks from broccoli head; shave into thin ribbons using a Y-shape vegetable peeler. Coarsely chop broccoli crowns. Grate zest and squeeze juice from lemon.
  2. Toss together broccoli, dressing, lemon zest, and juice in a large bowl; cover, and chill 15 to 30 minutes.
  3. Meanwhile, toast panko in ½ Tbsp hot oil in a large skillet over medium heat 3 to 4 minutes or until golden, stirring occasionally. Remove from skillet.
  4. Sprinkle chicken with rosemary, pepper, and salt. Cook chicken, in batches if necessary, in 1 Tbsp hot oil in skillet over medium-high heat 5 to 6 minutes per side or until done; cool slightly, and slice chicken.
  5. Toss lettuce, panko, and cheese with broccoli mixture. Serve chicken over salad.

  • 1 (10-oz) loaf focaccia bread, warmed

  1. Serve bread with salad.
